Chipotle Corn Salad

Ingredients

5 ears of fresh corn

2 roma tomatoes seeded and chopped

3 - 4 tablespoons fresh cilantro minced

3 tablespoons sweet onions minced

3 tablespoons Extra Virgin Olive Oil

1 tablespoon white wine vinegar

1 canned chipotle chili in adobo sauce seeded and minced

3/4 teaspoon adobo sauce from canned chipotle chilis

2 teaspoons fresh lime juice

1/4 teaspoon salt

Directions

Simmer corn 7 minutes. Remove kernels from ears of corn. Combine corn, tomatoes, cilantro and onion. In a small jar shake together the remaining ingredients. Pour over corn mixture. Serve at room temperature or chilled.
